Six Summer Salads & Sides I’m Loving This Season

It’s August People!

Hello friends, welcome or welcome back to the blog. I hope you’re getting a reprieve from the heat, enjoying the season, staying hydrated, and checking in with friends and family.

Today I’m sharing some Pinterest Salads and sides I’ve been making and loving this season.

It’s Summer, and no one feels like putting on a hot oven and heating up their whole kitchen. We love those sides that go with anything and those perfect room-temperature meals that make great meal options for work.


Here are just a few that I’m enjoying.

 

SPICEY CORN CARBONARA

Meal: Lunch

REVIEW: This recipe involved a lot of steps and was tasty, but once you incorporate the bacon with all the other ingredients, it doesn’t stay as crispy.  It’s also best right when you make it, even though I made this for 3 days of lunches. ⭐⭐⭐

CLASSIC CHICKEN SALAD

Meal: Lunch

REVIEW: This is hands down the best chicken salad, and it’s perfect with sandwiches, on a pita, or with crackers. It stands alone well. Go light on the mayo. You can always add more and cut the time by getting rotisserie chicken. ⭐⭐⭐⭐⭐

CLASSIC MACARONI SALAD

REVIEW: This is the easiest side you’ll make, and it’s great for picnics, goes with you’re classic bbq fav’s, great for Sunday dinner.. ⭐⭐⭐⭐⭐

MEDITERRANEAN PASTA SALAD

REVIEW: You had me at Salami.  I can’t wait to make this side, and since it’s chocked full of veggies, this lunch can stand alone.  Or, paired with pita chips.

PROSCIUTTO FIG SALAD

REVIEW: This enticing mouth-watering salad is happening this week.  The ingredients are on my shopping list, and I can’t wait to try it.  It’s easy, requires no cooking, and I think it can stand alone with some crusty warm bread and a glass of wine.

This was an exercise assigned to me by my health coach. Each month I set a new goal as I manage my Type 2 diabetes, and they usually involve things that address my stress, my overall health and eating healthy.

I aim to find some cold Summer salads that are easy to make. While they are not all perfectly healthy, I can control the ingredients because they’re homemade. I love taking fresh and simple ingredients to make something tasty.
