My Favorite Comfort Dishes
Hello beautiful people and welcome to the blog today!
I hope everyone is doing well on this Wednesday, staying positive, drinking plenty of water, and checking in with friends and family.
Over the weekend I went a funeral as my best friends Mom passed away. It was stressed by everyone who spoke that if your thinking about someone (a close friend or family member) and they continue to press on your mind …reach out and give them a call.
It’s so important to check in now with everything that’s swirling around within our current state of the world, so we need each other now more than ever.
Comfort Meals
When it’s Sunday all I want to do is relax (sip some wine) and not have to worry about spending my day or afternoon in the kitchen. So before the week is out I’m trolling Pinterest for one-pot or, crock pot meals that I can make for Sunday dinner. Here is a quick list of my goto meals for the past season.
ZUPPA TOSCANA SOUP

I’ve made this delicious soup twice now. It’s becoming a monthly thing although it’s probably better in the colder months because it’s really hardy. A one pot meal is great for a family and a great way slip in veggies that everyone will enjoy.
MISSISSIPPI POT ROAST

This is a great go-to meal, and I’ve made it a few times. Hands down, it’s the easiest crockpot meal you’ll make with just a little tang as the pepperoncini’s are not spicey at all. All you need is a few sides and this makes a great Sunday dinner. The first time I paired my roast with mashed potatoes and honey-glazed carrots to go with it. The meat is so tender it literally melts when you eat it.
HAM & KALE STEW WITH NAVY BEANS

Tis true this is more of a Fall / Winter meal and technically it’s still winter so it was perfect. I made this stew last week and it was really tasty and easy to make. Really great ingredients and plenty of protein.
CIABATTA AND SAUSAGE STUFFING

I’ve been making this dish off an on since about 2016, and it’s another Sunday dinner go-to meal. It’s simple ingrediants make this dish really easy to make in a short amount of time, and anything that saves me time is my new friend.
OVEN-FRIEND PANKO CRUSTED DRUMSTICKS

This is another great go to. You really can’t go wrong with oven friend chicken. Pair this with mac & cheese, au gratin potatoes, or creamy rice and your favorite vegatable. We really enjoyed one.
